Serving Up Pasta Joy, Inclusive Of Every Dietary Choice

I, Felicity Short, and my husband Carmen Acotto wanted to create a drive thru fast food experience for those who were unable to order at similar establishments due to specific dietary needs. There were quite a few late nights when I could not find something quick to eat because I cannot have dairy and gluten, or I was following a diet such as Keto or low carb. Another issue arose when it came to finding a quick lunch during my short work break at noon each day.

Knowing I had friends out there who felt similarly, Carmen and I created the concept of a quick service restaurant that serves comfort food to everyone, no matter the diet restrictions. And what food is more comforting than a mouth watering bowl of Mac N’ Cheese? Pair that with customized toppings and the options to have vegan and gluten free bowls, now everyone can enjoy.

“Cooking is life. Jeep is life. Love is life. Cooking has taken me all over, from small mountain towns and ski resorts in Colorado, to Italy, San Francisco, and here in Phoenix! My passion has always been good food done right, and has driven me in becoming an Executive Chef. After doing the resort, hotel, and casino circuit, I found my niche in the craft beer and cider gastro pub world"

"Always wanting to elevate the experience from the classic burger bar, I have hosted many craft cider and beer pairing dinners. From simple wine and cheese bruschetta pairings, to smoked bone in pork chops with a hazy IPA. Don't get me started on my soups and sauces, you'll have to clean up that puddle from your keyboard. Following my heart has exposed me to many different cultures and cuisines, but nothing compares to those childhood memories with Mac and cheese."
